Sweet Potato and Cinnamon Bread- -

A few people have been wanting this recipe for Sweet Potato Bread that I mentioned on Facebook.  When I was at college at Cedarville, there was an ever popular ice cream parlor and restaurant called Youngs.  We loved the ice cream and my favorite part about the restaurant was their bread they served with applesauce before a meal- sooo good!  When we were up visiting I saw they had their recipe on a postcard- so of course I bought it.  So even though I bought the recipe, I am giving you this for free- though I could charge 50 cents and help raise money for Jeremiah's future schooling- esp. if he intends to do as much as his daddy. :) 


Sweet Potato & Cinnamon Bread
Makes 1 loaf or 12 muffins

Ingredients:
3/4 cup butter softened
2 1/4 cups firmly packed brown sugar
1 1/2 cup sweet potato puree
2 eggs
2 1/2 cups flour
3/4 tsp. salt
3/4 tsp ground nutmeg
3/4 tsp. ground ginger
1 1/2 tsp baking soda
1 TB ground cinnamon
1 1/2 dashes ground cloves
1/2 cup water

Directions:  Preheat oven to 375
Butter & flour pan, cream butter & sugar until light & fluffy- stir in puree & egg
Sift together dry ingredients, stir into 1/2 creamed mix
Stir in water and dry mix.
Muffins bake 15 minutes
Bread bakes 35 minute

Friends

 So I am a little behind in my blogging.  Two weeks ago Matt & Leann, friends from Cedarville days came for a visit with their cute 2 little ones.  Hannah is 2 and Adelyn and Jeremiah are a week apart.  Leann and I were due a day apart and I ended up having Jeremiah on her due date.

Keepin it cool...

 In this heat... what can you do????  A friend from York, PA sent me a Good Time Ice onesie and I love it!  Jeremiah loves to wear it to match daddy's t-shirt.  Michael worked for Good Time Ice when he lived with my parents in PA the summer before we got married.  Now, my sister's husband is working for them this summer and my brother worked for them another summer.  We love the family that owns this company- they are great people to work for! 

 So.. we are doing everything we can to keep our cool in this heat this week.  This is Jeremiah meeting his Aunt Beka for the first time.  He was very excited!

Pictures at the Park...

 Having some fun taking some pictures at the park!  :)  It is at Cherokee park in Louisville- one of my all time favorite parks!  :)





 Two weeks ago, when we got back from PA I helped out at VBS in the  1st & 2nd grade class!  It was so fun- we did Sammy and the Shepherd based on the book by Susan Hunt.  We had a great time with the kids and it enabled me to get to know some of our kids better at our church.  On Friday, we even had a real sheep dog and sheep do a demonstration- the kids loved it!  Jeremiah was a trooper through it all and I was thankful for the dear nursery workers that watched him for a couple hours each morning!

The Last Beach Photos...

 I think the highlight of the beach for all of us was our night cooking on the beach and watching the full moon rise over the water!  We were able to make a fire toward evening and my brother, Chef Jonathan, cooked us up a mean dish!  Chicken kabobs with a great marinated sauce!  It was wonderful!  All the men folk shared devotions throughout the week which was neat! 






Of course- he had to have a beach hat to shield off the sun!

 I also got together with Laura LaQuay.  Her sweet little daughter was born shortly after Jeremiah so it was fun seeing the two of them the same age.  I always enjoy seeing Laura when we go to York.

Crabbing...

 One of the fun things we always like to do at the beach is crabbing... This was a family tradition when we were little guys running around.  We all loved getting those nasty chicken necks.  My dad and I would wake up early and ride to the little bait shop at the beach and buy those nasty chicken necks and we would go crabbing.  This year the boys- Michael and Mike (my sister's husband) got to experience the fun).  My Michael was trying so hard to catch one and in fact had one when I knocked it off trying to get the net under his line.  We think crabbing is so much more fun than fishing. :)  My sister got the biggest crab of them all that night- a real whopper- go Rache!

The Beach...

 In June... we enjoyed a trip to the beach, Chincoteague Island, VA with my family!  I love this picture of us as I think this just shows Jeremiah's reaction to the waves and water.  We tried to stick his little feet in and he hated it.  :)    Michael, of course, spent his time at the beach in the shade with a book with Jeremiah of course.  He was very careful not to let the rays of sun touch his little guy.  Though Jeremiah was not sure what to think of the beach- at least he liked all the attention! :)  In fact, I think he is still going through withdrawal and wanting to be held all the time!  :)

Highlights of June...

 Jeremiah had many firsts this June...  He flew on an airplane with mommy for the first time and did great though I did not fare so well as I found out I had an ear infection and had a bad cold.  Jeremiah also got to meet another Great- Grandmother all the way in PA near Philly.  We took a day and visited my cousins and their children- little Harrison is about a month older than Jeremiah.


 Jeremiah also attended his first baseball game with my mom and dad and he loved it.  Aunt Rachel and Uncle Mike came too as Mike got us free tickets as York Revolution was playing the team he used to play on.  Michael was sad he was not with us for this big event, but he got over it. :)  More beaches pictures to come.  I flew in a week before to spend extra time with my family and then we went to the beach together for a week.
